Healthy County Dijon Chicken

  1. 6-8 oz Boneless Skinless Chicken Breasts
  2. 3 teaspoons of oil
  3. 2 tablespoons of water (to thin the sauce)
  4. 3 tablespoons of dijon mustard
  5. Pinch of salt
  6. Pinch of pepper
  1. In a small bowl mix the water, oil, mustard, salt and pepper.
  2. Dice up the chicken, place in a baking pan. Pour the mustard mixture over the chicken so that it is fully coated.
  3. Bake a 450 for 15-20 minutes or until no longer pink inside
  4. *Squeeze lemon juice and excess sauce from the chicken over lettuce and eat as a salad or along side a vegetable!
