Chicken and Vegetable "Lo Mein"

Ingredients
  1. • 6 or 8 ounces of boneless skinless chicken breast, cut into small bite sized cubes
  2. •1 cup asparagus, cut
  3. •1 head broccoli, chopped
  4. •1 1/2 cup mushrooms, chopped
  5. •1 onion, chopped
  6. • 1 Red and 1 yellow pepper (or whichever colors you prefer) thinly sliced
  7. •1 clove of garlic, minced
  8. • ½ cup kikkoman Stir-Fry Sauce
  9. •One pack of Tofu Shirataki Spagetti
Instructions
  1. In a large skillet, add a teaspoon of minced garlic and about 1/3 cup of water to the pan. Start to broil the cut up asparagus, onions, red and yellow peppers (by cooking the vegetables with water you greatly reduce the amount of fat in a dish). When vegetables are slightly softened, add the mushrooms and broccoli. Set aside.
  2. Spray another skillet with Pam spray, add diced chicken. Sprinkle a little bit of salt and pepper to taste to the chicken. Cook the chicken, turning once, until no longer pink in the center and the juices run clear. An instant-read thermometer inserted into the center should read at least 165 degrees F.
  3. When the chicken is done, place in into the skillet with the vegetables, add the shirataki noodles (follow the directions on the package), and add the Stir-Fry Sauce
  4. Mix together and serve!
