Guilt Free Strawberry Cheesecake

Of course, anytime you alter a recipe and make it healthy, it is not going to taste exactly like the real deal. But in my opinion, this recipe comes pretty close! This is packed with protein, relatively low in carbs and so low in fat! Feel free to use any other fruit for your topping.

Guilt Free Strawberry Cheesecake

Ingredients
  1. 2 cup low fat cottage cheese (I used 1%)
  2. 3/4 cup nonfat Greek yogurt
  3. 2 large egg
  4. 3 Tablespoons Sugar
  5. 3 Packets no calorie sweetener (Splenda,Stevia, Truvia etc.)
  6. 3 tablespoons flour
  7. 1 teaspoon vanilla extract
  8. 1 tablespoon lemon zest (one lemon worth)
Instructions
  1. Preheat oven to 350 and grease a 8 or 9-inch cake pan.
  2. Combine cottage cheese and yogurt in a blender and process until very smooth (so until the cottage cheese mixture is completely lump-free). Add the rest of the ingredients and process until smooth.
  3. Pour into prepared pan and bake for 30 minutes, or until the top pulls away from the pan and looks smooth and solid. The entire cake should be slightly jiggly, but not sloshy.
  4. Let cool completely before refrigerating. Refrigerate for several hours or overnight.
  5. I did a really quick strawberry compote--just got a pack of frozen strawberries (10oz) brought to a boil in a small saucepan with a little bit of water and a sprinkle of sugar! Stir on high heat until thick!
