Garlic Roasted Eggplant & Mush

Ingredients
- 1 eggplant cubed
- 2 cups sliced mushrooms
- 2 teaspoon minced garlic
- Salt & pepper to taste
- Oregano to taste
- Oil or pam spray
Instructions
- Spray a baking sheet with non-stick cooking oil.
- Spread the mushrooms and cubed eggplant out on the sheet. Sprinkle with minced garlic, salt, pepper and oregano to taste
- Bake at 450 for 15-25 minutes or until the eggplant and mushrooms are tender
